1 bbq chicken, meat shredded
250 grams (8 oz) frozen broad beans
cherry tomatoes, halved
This delicious salad is perfect for lunch or dinner.
Green Goddess Dressing
200 ml (7 fl oz) natural greek style yoghurt
50 ml (1.5 fl oz) mayonnaise
20 grams (0.7 oz) watercress
Handful of parsley, basil and coriander (cilantro)
2 small spring onions, chopped
lemon juice & white pepper to taste
Hints and Tips
Replace bbq chicken with fresh prawns.
Cook the broad beans according to packet instructions then allow to cool.
Once cooled, remove broad beans from pods and set aside.
Prepare the dressing by combining all ingredients and blend in a food processor until you have a smooth consistency.
Place the chicken, salad and broad beans in a large bowl and mix well.
Add the half of the dressing to the salad and combine.
Serve immediately with extra dressing on the side.
