Freekeh & Parsley Salad

  • Ingredients

  • 1 cup of freekeh

  • 1 teaspoon of salt (optional)

  • 2 cups of parsley, finely chopped

  • 2 cucumbers, deseeded & finely diced

  • 2 tomatoes, deseeded & finely diced

  • 2-3 tablespoons of olive oil

  • juice of half a lemon

  • salt & pepper to taste

Hints and Tips

Depending on the juiciness of the lemon you may need to add more or less lemon juice.

Place the freekeh in a pot and cover with 3 cups of cold water along with the salt (if using).  Once boiling, cover & turn down to a low heat and simmer for 15-20 minutes.

Whilst the freekeh is cooking place the chop the parlsey, cucumbers and tomatoes and place in a serving bowl.

Once freekeh is cooked, remove pot from stove, strain & rinse under cold water and allow to cool.

Place the cool freekeh in the serving bowl with the parsley, cucumber & tomaotes and mix thoroughly and add the extra virgin olive oil, lemon, salt and pepper mix again & chill before serving.
