3 tablespoons of natural greek yoghurt
3 tablespoons of mayonaisse
half a bunch of coriander (cilantro)
8-10 basil leaves
1 large (or 2 small) jalapenos
juice of half a lime
This dressing is the perfect accompaniment to any type of seafood. Serve with smoked salmon or prawns as a delicious starter or for a main dish with roasted atlantic salmon or pan fried fish.

Hints and tips:
When adding jalapeno add a little then taste as some can be much hotter than others.
Place the herbs and jalapeno into a small food processor (or use handstick blender) and blend until herbs are a fine consistency (not pureed).
Add herbs to a bowl and mix in the yoghurt and mayonnaise along with the lime juice.
Refrigerate for 10-15 minutes before serving.
