100 grams (3.5 oz) of rice noodles
2 cups of red cabbage, finely sliced
2 cups of wombok, finely sliced
2 medium carrots, julienned
2 celery stalks, finely chopped
small bunch of coriander (cilantro) chopped
fried shallots to serve
Hands down the best noodle salad!
Noc Jam Dressing
1/2 cup of water
1 tablespoon of palm sugar (substitute brown sugar)
2 tablespoons of fish sauce
2 tablespoons of lime juice
2 tablespoons of rice wine vinegar
1 lemongrass stalk, finely chopped (white part only)
chilli flakes to taste
Hints and Tips
Add fresh prawns or poached chicken for a more substantial meal.
For the noodle, follow the cooking instructions on the packet.
Once the noodles are soft, rinse thoroughly under cold water until completely cool.
Chop the noodles into smaller pieces and place in a serving bowl.
Add the cabbage, wombok, carrots, celery & coriander and combine well.
For the dressing combine all ingredients in a bowl and stir until the sugar has disolved.
Pour dressing over salad combine well and finish with fried shallots.
