2 teaspoons of szechuan pepper
2 teaspoons of rock salt flakes
3 tablespoons of rice flour
900 grams (2 pounds) of chicken tenderloins
1-2 tablespoons of neutral flavoured oil for shallow frying

Hints and tips:
Cut chicken into bite-sized pieces before cooking and serve with lemon or lime wedges as a pre dinner canape.
You can also add some chilli flakes to the mixture for an extra kick.
Place the szechuan pepper, salt and rice flour in a medium size bowl and combine well.
Trim off any excess fat from chicken and dust lightly in the pepper and salt mixture.
Heat a large fry pan over a medium heat and add oil.
Once heated cook the chicken in batches for 2-3 minutes each side or until cook through completely.
Drain on kitchen towel before serving to remove any excess oil.
