1kg (2 pounds) of boiling potatoes
3 tablespoons of extra virgin olive oil (EVOO)
juice of half a lemon
2 tablespoons of chopped parsley
2 tablespoons of chopped chives
flaked rock salt to taste

Hints and tips:
This salad can be adapted to feed a large crowd. For example if you cook 2 kgs (4 pounds) of potatoes double the other ingredients.
The recipe is to taste so don’t be shy with EVOO, lemon & salt!
Recipe can also be made a few hours in advance.
Peel & chop potatoes to medium pieces and boil in salted water until just tender.
Once cooked, place potatoes in a flat dish or tray and allow to cool completely.
When cool, chop into small bite size pieces and place in serving bowl.
Dress with EVOO, lemon, parsley and chives plus salt to taste.
