3 large tomatoes, roughly chopped
2 small Lebanese cucumbers, peeled and finely sliced
250g (8.8 oz) watermelon, cubed
10 large green olives
150g (5.2 oz) feta cheese, crumbled
10 large mint leaves, torn
5 large basil leaves, torn
2 tablespoons balsamic vinegar
4 tablespoons olive oil
Sea salt flakes and ground black pepper, to taste

Hints and tips:
Sharp and crumbly Greek or Bulgarian Feta tastes best in this salad.
In a small bowl combine the balsamic vinegar, olive oil and salt and pepper, whisk to combine.
In a medium bowl place the tomato, cucumber, feta, watermelon and herbs. Pour over the balsamic dressing and toss gently. Place the olives on top and serve.
