  • Ingredients

  • 100ml (3.3 fl oz) vodka

  • 50 ml (1.6 oz) lychee liqueuer

  • 50 ml (1.6 oz) lychee and mint syrup (see below)

  • Juice of 1/2 lime

  • Ice cubes

  • Extra lychees and mint sprigs, to serve

  • Syrup:

  • 1 cup white sugar

  • 1 cup water

  • 1/2 cup fresh lychee flesh (approximately 12 lychees)

  • 1 tablespoon mint leaves, torn

Lychees and mint are meant for each other and this cocktail can attest to that. The half hour cook time is for the sugar syrup, it is worth the effort! Use any leftover with soda water for delicious homemade lychee and mint sodas.

Hints and tips:

If fresh lychees are unavailable, try canned lychees, reserving the syrup instead of making your own. It will save time as well.

For the Syrup: In a small saucepan combine the sugar and water over medium heat. Stir and bring to a simmer. Once sugar has dissolved add the lychees and mint. Simmer on low for 10 minutes and turn off the heat.

Once the syrup has cooled slightly, strain through a mesh sieve and refrigerate until required.

Place 2 martini glasses in the freezer.

To serve, place the vodka, liqueur, syrup, lime juice and ice in a container with a lid and shake vigorously. Strain into chilled martini glasses and garnish with a lychee and a sprig of mint.

Note: Check before serving and if too sweet, add more lime juice or chilled water.
