Make a day or two ahead for an easy dessert or pre dessert
Juice 500g (1 pound) of the watermelon in an electric juicer, and strain the liquid, to remove any foam.
In a small saucepan place the sugar and water. Stir while heating until sugar dissolves & once boiling commences remove from heat and set aside to cool.
Add cooled sugar syrup and champagne to watermelon juice and pour liquid into a shallow metal rectangular baking tray (approximately 25cm x 15cm / 10” x 6”).
Place in freezer overnight.
To serve, finely dice the remaining fresh watermelon and mix in the shredded mint leaves. Divide into small bowls or cocktail glasses.
Using a fork, scrape the top of the frozen granita, and scoop the granita onto the fresh watermelon and serve immediately.
