  • Ingredients

  • 1 tablespoon of peanut oil

  • 3 spring onions (scallions) finely chopped

  • 1 large clove of garlic, crushed

  • 2 cm (1/2 inch) piece of ginger, grated

  • 700 grams (25 oz) beef mince

  • 3-4 tablespoons of hoisin sauce

  • 2 teaspoons of szechuan pepper

  • 150 grams (5 oz) of snake beans, chopped

  • Red or orange mini capsicum (bell pepper)

  • 100 grams (3.5 oz) of bean shoots

Hints and Tips

Pork mince works equally well in this dish.  You can also add baby corn or broccoli to this stir fry.

Heat a wok (or large fry pan) over a medium-high heat add the peanut oil, spring onions, garlic and ginger and cook for 2 minutes.

Add the beef in batches and cook until the beef is cooked through (about 8 minutes).

Add the hoisin sauce, szechuan pepper and beans, turn the heat to low and simmer for 10 minutes.

Lastly add the capsicum and bean shoots and simmer again for 2 minutes.

Serve immediately.
