Inspired by his cousin Tom 🙂

A hydrating and sweet beverage for a hot day.  One of our favourites.

Pairs well with …..

Nibbles or any food in hot weather

Hints and tips:

If you like your cocktails with a bit of a kick then use a short glass.  If limes are out of season then swap fresh limes for lime juice that can be found at the supermarket.  Experiment with the Sugar Syrup to balance the sweetness to your taste.

Squeeze your limes to extract 1 shot of lime juice.

Fill your cocktail mixer with 3 quarters of cubed ice.  Add 2 shots of your favourite gin, 1 shot of lime juice and 0.5 shot of sugar syrup.

Put the lid on the cocktail mixer and shake well until all blended.

Half fill your short or tall glass with ice cubes.

Strain the Bill Collins blend into your glass. Top up with club soda.  Garnish with a lime wedge.

Drink with or without a straw.

If feeling happy…. rinse and repeat 🙂
