  • Ingredients

  • 2 cups of pitted dates

  • 1 teaspoon of baking soda (bicarbonate soda)

  • 3/4 cup of boiling water

  • 1 cup of grapeseed oil

  • 4 eggs

  • 2 teaspoons of vanilla extract

  • 1 cup of caster (superfine) sugar

  • 1 cup of good quality cocoa powder

  • 1 cup of self raising flour

  • 1/2 teaspoon of baking powder

  • 1/2 cup of dark, milk or white choc chips

  • 120 grams (4 oz) of frozen raspberries

After many disasters trying to create brownies without butter I think I’ve finally nailed it!!!

Hints and Tips

Replace raspberries with blueberries or mixed berries

Heat a fan-forced oven to 160C (320F) degrees and line a square brownie tin with baking paper.

Place the dates, baking soda and oil in a glass bowl and cover with boiling water.

Allow to stand for 20 minutes.

Mash the dates until you have a smooth consistency.

Add the eggs, vanilla extract and sugar and stir until combined.

Next, add the cocoa, flour and baking powder and stir again.

Finally, add the choc chips and raspberries and gently combine.

Pour mixture into brownie tin and cook for 45 minutes.

Remove from oven and allow to rest in tin for 10 minutes before placing on wire rack to cool completely.

Once completely cool, slice into small pieces & dust with cocoa and enjoy!!
