Hints and Tips
Replace slivered almonds with hazelnuts & replace dried apricots with dried currants for a different flavour combination.
Heat fan-forced oven to 180C (360F) degrees.
On a large flat baking tray, place the rolled oats, shredded coconut and almonds.
Drizzle over the honey and mix to combine well and flatten out mixture.
Bake for 20-22 minutes, stirring every 5-7 minutes to ensure mixture is cooking evenly and to prevent from burning.
Once golden and crisp, remove from the oven and allow to cool completely.
Whilst the mixture is cooling, chop the dried apricots into small pieces.
When mixture is cool, add the goji berries and dried apricots and combine.
Store in an airtight container – muesli will stay fresh for about one month.
