  • 1 cup of light soy sauce

  • 1/2 cup of mirin

  • 1/2 cup of sherry

  • 1/2 teaspoon of sesame oil

  • 1/4 cup of caster (superfine) sugar

I find most store bought teriyaki sauces too thick and loaded with sugar.  This is so quick & easy to make you will never buy it from supermarket again.

Hints and tips:

For a different flavour combination, add dried chilli and crushed garlic & ginger.

Place all the ingredients into a pot and bring to the boil stirring occasionally to ensure sugar doesn’t stick and burn.  Once boiling, reduce the heat to low and simmer for 10 minutes or until sauce has reduced slightly.

Allow to cool completely.

Once cooled, pour into a sterilized jar and it will keep in the refrigerator for months 🙂
