  • 1/2 cup of light soy sauce

  • 2 tablespoons of brown sugar

  • 1/4 cup of sake

  • 1/4 cup of mirin

  • 500 grams (1.1 pound) of chicken breasts

  • shallots (scallions) and snow peas to serve

Hints and Tips

You can replace the shallots (scallions) and snow peas with whatever vegetables you have in your refrigerator.

In a glass bowl, place the soy sauce, sugar, sake and mirin and stir until the sugar has dissolved.

Cut the chicken breasts into 2cm cubes and place in the marinade, combine well and refrigerate for at least 30 minutes.

Remove from the refrigerator and thread four pieces of chicken onto a skewer.  Repeat with remaining chicken.

With the remaining marinade, place in a small pot and simmer over a medium heat whilst you cook the chicken.

To cook the chicken, heat a large flat-based pan over a medium heat, add a tablespoon of olive oil and cook in batches for about 4 minutes each side until cooked through.

Once the chicken is cooked, place the shallots and snow peas in the same pan and cook for 2-3 minutes or until cooked to your liking.

Place chicken skewers on a platter with the shallots and snow peas and pour over the sauce.

Serve immediately.
