  • Ingredients

  • 1 whole celeriac peeled and shredded or grated

  • 2 red apples (pink lady or other) shredded or grated

  • 1 tablespoon finely chopped mint

  • 1 tablespoon finely chopped chives


Very quick to prepare and so elegant and fresh. A mandolin for shredding will make life easier but a hand grater is also fine.

Garlic Roasted Pork Belly

  • Dressing:

  • 1/3 cup mayonnaise

  • 2 tablespoons Greek yoghurt

  • 1 tablespoon apple cider vinegar

  • Salt and black pepper, to taste

Hints and tips:

Make the dressing and chop the herbs ahead of time. Slice the celeriac and apple just before serving.

Combine celeriac, apple, mint and chives in a bowl.

Mix dressing ingredients together and pour over salad. Toss gently and serve immediately.
