  • Ingredients

  • 1 kg (2 pounds) of large green (uncooked) prawns, peeled

  • 1 onion, sliced

  • 3 teaspoons of capers

  • 1 clove of garlic, crushed

  • 400 grams (14 oz) tomato passata

  • chilli flakes to taste

  • 200 grams (7 oz) of fetta cheese

  • handful of baby spinach

  • 3 tablespoons of chopped parsley

Hints and Tips

Use fresh prawns for this recipe.

Heat a fan-forced oven to 180C (360F) degrees.

Peel the prawns and place in an ovenproof dish.

Add the sliced onion, capers, garlic, tomato passata and chilli flakes (if using).

Combine thoroughly and then place small cubes of fetta cheese on top.

Place in the oven and bake for 25 minutes.

Remove from oven and stir in the fresh spinach.

Return to the oven for 3-5 minutes.

Once cooked remove from oven, sprinkle with chopped parsley & serve with green salad and crusty bread.
