Whole fillet of salmon
1 cup of natural greek yogurt
1 tablespoon of tahini
juice of half a lemon
1/2 cup of finely chopped parsley
3/4 cup of chopped walnuts

Hints & Tips
Tahini has a strong flavour so if you haven’t used it before, I suggest starting with a tablespoon and then add extra once you are used to the flavour.
The salmon can easily be cooked on bbq over a medium heat.
Firstly, prepare dressing by combining greek yogurt, tahini, lemon juice & black pepper.
To prepare salmon – brush large piece of aluminum foil with olive oil, place fish skin-side down and season with black pepper.
Fold the foil around the salmon so it is full enclosed in the foil.
Place on baking tray and cook for 15 minutes for pink, 17 minutes for medium or 20-22 minutes for well done.
Once the salmon is cooked to your liking, gently place on serving platter, dress with yoghurt dress then sprinkle over the chopped parsley & walnuts.
