  • Ingredients

  • 4 vietnamese bread rolls

  • 250 grams (8 oz) cooked prawns (shrimp)

  • 1-2 tablespoons of sweet chilli sauce

  • 2 tablespoons of mayonnaise

  • 1/2 cup of shredded lettuce

  • 1 lebanese cucumber, sliced

  • 1/2 avocado, sliced (optional)

Hints and Tips

You can replace the prawns with poached chicken.

Add sliced jalapenos for an extra kick!

In a glass bowl mix together the prawns & sweet chilli sauce.

Cut each roll in half lengthways and spread with mayonnaise & sliced avocado (if using).

Top with lettuce and cucumber and serve.
