You can replace the prawns with poached chicken.
Add sliced jalapenos for an extra kick!
In a glass bowl mix together the prawns & sweet chilli sauce.
Cut each roll in half lengthways and spread with mayonnaise & sliced avocado (if using).
Top with lettuce and cucumber and serve.
