  • Ingredients

  • 150g (5.2 oz) piece sashimi grade tuna

  • 4 teaspoons sesame oil

  • 1 teaspoon ginger, finely grated

  • Pinch of sea salt flakes

  • Grated zest of 1 lemon

  • Lemon quarters, to serve

  • 1 spring onion, finely sliced

  • 1 small ripe avocado, sliced

  • Black and white sesame seeds, for garnish

Good quality fresh seafood is best served with simple flavours. This tuna will melt in your mouth and is perfect as a starter or snack.

Hints and tips:

Marinate in the refrigerator for longer if time permits, to allow the flavours to develop.

Cut the the tuna into 2cm (¾ inch) cubes. Place a cube between to layers of cling wrap (film) and very gently flatten with the smooth side of a meat mallet. Not too thin or they will tear. Repeat with all of the cubes.

Mix the sesame oil, ginger, lemon zest and sea salt in bowl. Gently smear the marinade onto the tuna slices and leave to marinate in the  refrigerator for around 15 minutes.

Slice the avocado and place around the edges of a serving dish, layer the marinated tuna in the middle. Sprinkle with the black and white sesame seeds, spring onion and lemons on the side. Squeeze lemons over the tuna and enjoy.

Serve with slices of toasted Italian bread.
